Let’s start by what’s right with raw. Raw food gives you lots of antioxidants which are destroyed with cooking. The mineral and vitamin content won’t appreciably change with cooking, and some would argue that you get lots of living enzymes that support the body and the digestion. I’m not sure of the true value of having living enzymes, but I do know that patients who have difficulty digesting raw juices, do much better when the juice is fresh and not bottled or left in the fridge for a few hours. So obviously something is lost that supports digestion when these are stored. Now we turn to what’s wrong with raw.
